Avocado Toast with Egg

So the last 2 weeks I have been taking part in this Instagram photo challenge, like I’ve mentioned in my previous post. The theme this week was healthy breakfast. Right. And I didn’t want to make another smoothie. I love smoothies, don’t get me wrong. But I just wanted something different, more hearty. And healthy. So how do you do that without crisping bacon?? lol. Then the idea dawned on me. Avocado… on toast, yes! And better yet, homemade bread toast!

I love how the house smells when you bake fresh bread.  I used to bake bread quite often, it is easy after all.   But since becoming a mama, free time is constantly slipping out of my hands. I can’t get hold of it.  Therefore, after thinking long and hard, I decided to get a breadmaker. It really does make a ton of difference. You just put the ingredients in and voilà, a few hours later you have fresh bread. It takes like 5 mins to add all the ingredients and then the machine does all the work for you. It tastes great too! I highly recommend it.

Ok, back to the recipe. Toast 2 slices of bread. Take the avocado and slice it all the way around and twist it apart. To get the avocado pit out, take a fork or knife and tap the pit, make sure you are careful not to hurt yourself. Pull the fork or knife away, and the pit should come right out. Drizzle the toast with some olive oil. Scoop out one half of the avocado and spread it on the toast.

Grind some pepper on top and you are set!

Usually I accompany this with hardboiled egg. Basically, I boil a medium sized egg for around 8 mins. Remove the egg from the boiling water and immediately dip it in ice cold water to stop the cooking. After a few mins it should be cold enough to peel it. Slice it in two and plate it. Drizzle the egg halves with just a bit of olive oil, lemon juice and freshly ground pepper. If you are a fan of lemon (like me and my 15 month old 😉 you will love this. It opens up a totally different taste window in your mouth!

Time: 15 mins

INGREDIENTS

1 ripe avocado (half an avocado per toast slice)

2 slices of toasted bread

1 hard-boiled egg

extra virgin olive oil

lemon juice

ground pepper
DIRECTIONS

Toast 2 slices of bread.
